Backstory:
I overcame three challenges while filming the chef. First, I had to keep my hands steady, since I shot all the footage on my smartphone. Having handled a DSLR before — a much heavier device — made steadying a phone manageable. Second, I had to think creatively about angles, because there was barely any room to shoot, especially on the cart. I settled on filming him at work, mixing close-ups of the food with wider shots of the surrounding area. Finally, I had to pause and resume filming repeatedly, since I didn't want my work to interrupt his business. I stepped back whenever he was serving customers and saved our conversations for the lulls between the lunch and dinner rushes.
